Pea Puree, Feta & Mint Snack

This is one of my all-time favorites, especially in summer. It’s refreshing, light, and full of flavor. You can always add other flavors and spices if you desire.


1 cup cooked peas, room temperature

1 tbs tahini (or cashew or seed nut butter)

75 ml olive oil

2 tbs natural plain yogurt

80 g feta cheese

1 tbs fresh lemon juice

1 tsp sea salt flakes and pepper, to taste

6 mint leaves


  1. In a food processor, process all ingredients until smooth. Taste and season with salt and pepper.
  2. Enjoy as a dip or snack on a seed or wholewheat cracker, rye bread, or corn crisp.
